Vegan Chocolate Hazelnut Cheesecake

 Vegan Chocolate Cheesecake

 

Ingredients

  • 200g Digestive biscuits (half a pack)
  • 150g dairy free butter
  • 500g (2 tubs) of vegan cream cheese
  • 150g icing sugar
  • 6 tbsp vegan chocolate hazelnut spread
  • 1 cap of vanilla extract
  • 1 tbsp Irish Sea Moss 
  • Handful of hazelnuts
  • 200g dark chocolate
  • 50g of vegan milk chocolate
  • 50g vegan white chocolate

Instructions

  • Preheat the oven at 180
  • Crush the Digestive biscuits anyway you want (I use a pestle or a rolling pin)
  • Add the biscuits to a bowl with 150g of butter (I melt my butter in the microwave for 10 seconds so it's easier to mix)
  • If the mixture is still too crumbly and dry, add a splash of water (but it shouldn’t be soggy)
  • Grease your cake tin with a bit of butter and pack the biscuit mix in an even layer
  • Put it in the oven for 4 minutes at 180 then leave to cool.
  • For the filling, mix the cream cheese, icing sugar, vanilla extract and 3 tbsp of chocolate spread together
  • For extra chocolatey taste, grate/crush some dark chocolate and add to the filling mix
  • Add 1 tbsp of Irish Sea Moss for extra moisture and super smooth consistency
  • Crush a few hazelnuts with a pestle (or whatever you have) and mix it into the filling
  • Layer it on top of the biscuit and leave in the freezer for 4 hours
  • Melt the dark chocolate with 3 tbsp of the chocolate hazelnut spread (I melt mine in a glass bowl on a saucepan of boiling water)
  • Remove the cake from the tin and place on a wire rack
  • Pour the melted chocolate over the cake and let it drip down the sides (it will set very quickly so be sure to work fast!) Decorate the cake with crushed hazelnuts, using melted vegan milk chocolate to stick them on (again, you have to work quickly as the chocolate will set)
  • Once set, grate some vegan white chocolate and sprinkle it over the cake for that final touch!
