Vegan Ackee & Irish Moss Mousse
This lightly sweetened ackee mousse is chilled set with the use of Irish moss.

Total Time: 2 hours 10 mins plus (with chilling)
- 2 cup / 200ml cashew milk
- 1/2 cup / 120g Irish Sea Moss Gel
- 1 cup / 120g maple syrup
- 2 cup / 200g parboiled Ackee
- Splash of vanilla extract if desired
* Crushed seafoam candy, nuts or fruits
* Melted chocolate or caramel sauce
* Whipped coconut cream
- Warm up the ackee, milk and moss slightly.
- Blend all the ingredients together. Distribute evenly between 4 glasses.
- Chill till set (as quick as 2 hours but overnight is best for the flavours to meld together).
- Serve garnished as desired
